Food and Drink in Champagne
Truffles are another famous product of the Haute-Marne. 200 kilos are produced annually although this figure used to be something approaching 12 tonnes in the late nineteenth century. Truffle production was halted at the beginning of the twentieth century due to a number of setbacks, but was restarted about fifteen years ago. ‘Andouillette de Troyes’ is the most famous of the cooked meats made in the region. It dates back to the ninth century and has a unique flavour. Pigs trotters in breadcrumbs is a delicacy enjoyed in the Marne, particularly in the village of Saint-Ménehould.
Boudin Blanc de Rethel is a favourite of the Ardennes – a white pudding. Pork products are typical of Champagne-Ardenne. Also in the Ardennes, the ‘Red Turkey’ is renowned for its fat thighs and the quality of the meat! It was so popular with several kings of France that it nearly disappeared at one time.
The Aube-en-Champagne is the second most important ‘départment’ in France for the production of cabbage and sauerkraut, which was introduced many years ago by immigrants from Alsace. 20,000 tonnes is produced in the Aube-en-Champagne every year. Chaource cheese, a white, smooth, creamy variety, is made in the Aube-en-Champagne and is AOC recognised. Langres cheese is also AOC but is an orange coloured, concave shaped cheese made from full fat cow’s milk.
Champagne-Ardenne is renowned for its sweets, desserts and confectionary such as ‘Gateau Mollet’, ‘Galette au Sucre’, ‘Croquignoles’, ‘Bouchons de Champagne’ and ‘Ardoises’. Biscuits Roses de Reims were invented in the twelfth century by the bakers of Reims. It is from here that we get the word ‘biscuit’ (bis – cuit) which means cooked twice! .jpg) The Champagne Tourist Route In southern Champagne, there are no huge champagne corporations, just small family businesses…i.e. wine-growers from one generation to the next… Meander at your own pace along the ‘Route Touristique du Champagne’ (Champagne tourist route). There is certainly no shortage of wine-makers who will be delighted to make you welcome on their property. Some of them even bear the "point d'accueil" label (a label based on the quality of welcome for visitors) awarded by a jury of wine-making and tourism professionals.
