The salt marshes of the Presqu'île de Guérande
White Gold: Classified as one of the 100 ‘Sites of Remarkable Taste’ in France, this magical place, where seawater circulates through a complex network of canals and basins, is the pride of Guérande, and has furnished its wealth since the iron age. This is where the 'white gold' crystallizes, due to the combined action of sun and wind, before being hand-gathered by the salt marsh worker. A stroll around the salt marshes is full of charm.
The Noirmoutier Salt Marshes: Noirmoutier came alive in the 1980s, although only a few salt marshes - run by a handful of die-hards from the mainland - were still operational. Little by little, the profession got itself organised, and the salt activity was restored to its former honorable status. As heir to a tradition that is exceptional in nature, and more than 1600 years old, Noirmoutier has the benefit of both authenticity and quality. Salt is the perfect partner to the island's famous potato - the bonotte.
