Your Choice of Specialities in Rhône-Alpes Rosette, Jésus, Saucisson de Lyon and Sec d’Ardèche, hams and sausages from Savoie, the range of “charcuteries” are often the main ingredient in traditional recipes like the onion-flavoured “boudin”, the Cervelas Lyonnais cooked in a brioche pastry or the Sabodet cooked with apples in oil. This is a land of lakes and rivers, which means that fish is cooked differently depending on which part of the region you are in. In Lyon it might be pike “quenelles”, or carp stuffed with breadcrumbs, herbs and cream in the Dombes, or perhaps simple oven-grilled “omble chevalier” in the Savoie and Haute Savoie.
It is the same story for meat and poultry dishes: partridge cooked with cabbage or turkey served with chestnuts in the Vivarais (Ardèche), beef “daube à la dauphinoise”, jugged hare in Savoie or chicken cooked in vinegar in Lyon. These main dishes are usually served with such specialities as “crozets de Savoie” (pasta), gratin dauphinois (potatoes baked in cream), or cardoons served with bone marrow in Lyon. And to satisfy the most hungry of appetites, there is nothing better than a piece of walnut cake from Grenoble, the sweet “bugnes” or fritters served in February during Carnaval, the Savoie biscuit, pogne or brioche stuffed with pralines.
